Explanation of variables, and some East End liveliness

Ooops. Forgot to include variable
'Saturation with habitual drinkers' (scale 1 to 5, where '1' means 'free of habitual drinkers' and '5' means 'as full of habitual drinkers as one could imagine a bar to be'). 'Habitual drinkers' are the near-alcoholic sorts who usually sit near the bar.
